I'm looking for a satisfying answer to this because it seems to my student eye that a diet of protein and fat could supply all the carbohydrates needed (including all the metabolic intermediates (?)) via gluconeogenesis. Can someone tell me why I'm wrong?

Not at all...carbohydrates are the main source of energy and they make up metabolic mainstream therefore life without carbohydrates is impossible. Also fats cannot be broken down without carbohydrate metabolic pathways.
